Lemon Raspberry Muffins


 Happy Wednesday friends!!

I've been feeling something tangy, so when I found this recipe I just knew I had to try it out! 

These Lemon Raspberry muffins are not only tangy with the lemon but also have a sweet flavor to them with the raspberries. 

Ingredients:
  • 2 1/2 cups of Flour
  • 1 cup of Sugar
  • 2 teaspoons of Baking Powder
  • 3/4 teaspoons of Baking Soda
  • 3 Eggs
  • 1/2 cups of Greek Yogurt (or sour cream)
  • 3 Lemons, juice, and zest
  • 3/4 cups of Canola Oil
  • 2 cups of Raspberries

Directions:

  • Preheat oven to 350 degrees Fahrenheit
  • In a medium bowl, mix the dry ingredients: flour, sugar, baking powder, baking soda
  • In a large bowl, mix the wet ingredients: eggs, greek yogurt, lemon juice and zest, canola oil
  • Slowly add the dry ingredients to the wet ingredients. Do not over mix
  • Fold in raspberries
  • Place in a muffin pan with muffin liners. Bake for 15 to 20 minutes
The Process:

This is the uninstagramable part of the process. 

But, this is life. It gets messy and it is out of control. But that is okay.
